Iced green tea to start the day! Did you know that green tea is the least processed type of tea? It’s made from unoxidized leaves, therefor giving it this highest levels of antioxidants and polyphenols, which provide anti-carcinogenic and anti-inflammatory effects. Although 1 cup of green tea only provides about half of the caffeine found in coffee, it’s much less acidic and has a lot more health benefits. Antioxidants, which are found at high levels in green tea, help to fight free-radicals in the body, which can alter DNA, damage cell membranes and cause the “bad” cholesterol (LDL) to clog arteries. Plus, it’s less likely you’ll go through caffeine withdrawal & get headaches when drinking green tea, and there’s no more coffee breath! My favorite brand is Prince of Peace. If you’re looking for sweetness, try adding a few drops of stevia to your tea!

Only the best at @seedtosprout. I swear there’s kale under there… And it’s marinated in lemon juice, nutritional yeast & sea salt! Topped with kraut (homemade at the restaurant!), shredded carrots & beets and pico de gallo. Drizzled, of course, with homemade tahini dressing. Couldn’t resist! #seedtosprout

Avocado Chocolate Mousse served with beautifully ripe pears! This raw, vegan, gluten-free, oil-free, sugar free mousse is so delicious - you can’t even take the avocados! Plus, it’s only sweetened with fruit! Here’s the recipe:
2 ripe avocados
8 Tbsp cacao powder
8 dates (pitted & chopped)
1 Tbsp vanilla
A few splashes unsweetened almond milk, to taste
Blend on high until the mixture turns in to a pudding-like consistency
Serves 4. Enjoy!

Zucchini Noodles with mango, cucumber and an orange peanut lime sauce! For the sauce: blend 2 tsp creamy peanut butter, 1/4 fresh squeezed OJ, 1 tsp tamari, 1 clove garlic, 1/2 lime (juiced), splash unsweetened almond milk (to taste). Savory, sweet and so refreshing!

Chia bowl with pear, banana and homemade, unsweetened almond milk! Such a great combo! For the chia seeds, soak 1.5 Tbsp chia in 1/2 cup water until the seeds have gelled, it usually takes around 30min. For the almond milk, blend 2 Tbsp almond butter with 2 cups water & 2 tsp vanilla. For sweetness, try adding some stevia in the raw or try some reduced balsamic vinegars - they’re my favorite!!

Zucchini pasta with Walnut Acres oil-free, salt-free marinara sauce and an absolutely insane homemade BRAZIL NUT PARMESAN! Unreal. Super easy, too: spiralize 2 zucchinis & heat in a small pot with desired amount of red sauce. Don’t heat for too long or the “noodles” will get much thinner & form clumps. For the cheese, blend or process: 1 cup of Brazil nuts, 1 clove garlic, 1 Tbsp nutritional yeast & a pinch salt to taste (or none at all). I’m so excited to have leftovers of this cheesy-like crumble! SO good!!
